Double bevel only, please.
I don’t use any grinders. I use Waterstones and finish with stropping on leather. I’ll only remove the necessary amount of material. If I’m not comfortable sharpening a certain knife I’ll just let you know. The fact is, most knives, even cheap ones, are still made with decent Stainless steel, and it’s totally worth sharpening them, rather than throwing them away.

For now I do this at home for extra grocery money, you can drop off at the shop. I do the actual work on my days off (Sunday/Monday) If demand seems to justify it, I may set up a second station at the shop to make everything easier for my East End folks. Thanks.
